Zucchini Noodles with Pesto

Zucchini Noodles, or “Zoodles,” are a fantastic way to eat more greens. Paired with pesto, they make a vibrant and satisfying meal.
Modo de Preparo
- Spiralize: Use a spiralizer to turn the zucchini into noodle shapes. Trim them with scissors if they are too long.
- Sauté: Heat olive oil in a large pan over medium heat. Add zoodles and cook for 2-3 minutes, tossing constantly. Do not overcook or they will get watery.
- Sauce: Remove from heat and immediately toss with the pesto.
- Top: Stir in the cherry tomatoes.
- Serve: Garnish with toasted pine nuts and grated parmesan cheese.
Dica
If your zucchini seems very watery, sprinkle the raw noodles with salt and let them sit in a colander for 10 minutes, then squeeze dry before cooking.
