- Prep Veggies: Wash and chop all vegetables into bite-sized pieces.
- Sauté Aromatics: Heat oil in a wok or large pan. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
- Cook Veggies: Add the harder vegetables (carrots, broccoli) first, stir-fry for 3-4 mins. Add softer veggies (peppers, peas) and cook for another 2-3 mins.
- Make Sauce: Pour in soy sauce and sesame oil. Stir well.
- Thicken: Add the cornstarch mixture. Cook for another minute until the sauce thickens and coats the vegetables.
- Serve: Serve piping hot over steamed rice or noodles.
